Holiday Baking

My holiday baking is VERY limited this season with the move, but I am going to have some time this weekend to make a few things.  However, I do not have any of my cookbooks or recipe cards with me.  I know I can peruse a few of my favorite online sites to look for things, but I wondered if any of you had any tried-and-true recipes that I should try.  I have already made my peppermint bark brownies (huge hit every year) and I don't have any of my cookie cutters here for my traditional butter cookies, but any other ideas would be GREAT.  Feel free to just comment that I should email you if you don't want to post the whole thing in the comments or just link me to the recipe online!

  1. I just made a big batch of white chocolate cranberry cookies! I just used a basic chocolate chip cookie recipe and added lots of white choc and crans!

  2. Try these...SO EASY and always a hit! My friends request them whenever I come to their parties. ;)

    Easy Oreo Truffles

    Ingredients:

    1 pkg. (1 lb. 2 oz.) OREO Cookies, finely crushed, divided
    1 pkg. (8 oz.) Cream Cheese, softened
    2 pkg. (8 squares each) Semi-Sweet Chocolate, melted

    MIX 3 cups of the cookie crumbs and the cream cheese until well blended. Shape into 42 (1-inch) balls.

    DIP balls in melted chocolate; place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs.

    REFRIGERATE 1 hour or until firm. Store any leftover truffles in tightly covered container in refrigerator.

  3. doing a post related to this on Friday and it's as easy as pie and only requires hershey hugs, ring-shaped pretzels and m&ms. stand-by!

  4. I second the white chocolate and the cranberry! It's a combination I use all the time this time of year. If you hop on over to my food blog you will see a recipe for white chocolate and cranberry biscotti. It's actually Giada's recipe and it is AMAZING! Several of my friends have made this already and are working on batches #2 and 3... Shortbread is another favorite whether you bake it plain, with chocolate chips or add some icing. And it's easy. I've been dying to try those Oreo balls. I wonder if they would work with Mint Jo-Jos? (Trader Joe's peppermint version of the oreo!) I think I have to try!

  6. I got this recipe from my friend Solar Powered.... I have not made this exact recipe, but I make a similar version. They are easy and delish!

    1/4 cup butter, softened
    1 egg, beaten
    8 oz cream cheese, softened
    1/4 tsp vanilla
    1 box white cake mix

    Cream the butter and cheese until fluffy then add egg and vanilla. Mix 1/2 the cake mix in until smooth then add the other 1/2. Drop by tbsp or so onto an ungreased cookie sheet and bake at 350 for 10-12 min.

    These turn out like a moist, melt in your mouth tea cake. I usually take them for work the week of Christmas and everyone eats them with their morning coffee.

    You could spruce them up any way you like. Use a lemon cake and mix in a little lemon zest or use strawberry cream cheese and a strawberry cake mix for a perfectly pink cookie. Enjoy!
